Breakfast Casserole

If you love to start your day with a hearty breakfast treat consisting of eggs, cheese, and your favorite breakfast meats, then you will love this breakfast casserole.

I love to experiment with my meals and I’m always trying to make traditional meals in a new way. This past weekend I decided to take a couple of our favorite breakfast dishes and combine them into one casserole and the results were quite tasty.

In fact, the casserole was so good that my husband ate the entire thing and asked if I would make it again next weekend with some additional meats like sausage and bacon.

This dish was incredibly easy to make and turned out better than I expected. The breading tasted like a croissant with a twist. The egg was fluffy and the meat and cheese just made it even better.

Here is what you will need:

  • Casserole dish (12″ x 8″ for full recipe or 8″ x 8″ for half recipe)
  • 1 1/2 Cups of Butter or margarine
  • 1 1/2 Cups of Flour
  • 1 1/2 Cups of Water
  • 7 Eggs
  • 6 Ounces of Meat: ham, sausage, bacon, and/or prosciutto
  • 6 Ounces of Cheese: shredded american, diced velveeta, and/or other cheese of your choice
  • 2 Tablespoons of Chives
  • 1 Tablespoon of Milk
  • Salt and pepper to taste
*I cut this recipe in half and used ham with shredded mexican cheese. My husband said it would taste better with more than one meat and cheese, so next time I plan to use a combination of velveeta and shredded american cheese with sausage, ham, and bacon. 
Directions:
Preheat your oven to 425°. Place the water and butter into a pan and bring to a boil. Once the water has begun to boil, turn down the heat and add the flour. Stir/beat the flour for about two minutes until it forms a ball. Then, place the flour in a large bowl and begin mixing in the 6 eggs one at a time (save the last egg for the end). It is important to add the eggs one at a time because adding them all at once will make the batter too watery. Next, add your meat(s), cheese(s), chives, and salt/pepper to taste and mix well.

Make sure your casserole is well greased (I use Pam cooking spray) and begin to scoop spoonfuls of the mixture into the casserole dish. Make sure there aren’t any huge caps in the pan. Once all the batter is in the pan, take a knife and run it up and down the top of the casserole dish to help fill in any holes. Then beat your final egg with 1 tablespoon of milk and brush the egg mixture over the top of the casserole. Lastly, sprinkle the top of the casserole with cheese and place the casserole dish in the oven. Bake for 45-50 minutes.

Feel free to add or remove ingredients to your liking. Not everyone loves the same meats, cheeses, and spices, so take this opportunity to make this dish your very own.
