Lemon Cookies

I love lemon cookies! And I also love to bake. So finding a simple and delicious lemon cookie recipe while patrolling numerous websites with my best friend was a total score for me.
This lemon cookie receipe seemed a little too good to be true because it was so easy, but I just crossed my fingers and hoped they would taste as good as they looked online. Luckily, the lemon cookies turned out even better than my best friend and I had imagined, which is why this little recipe has made it into my favorite cookie recipe index.
I hope you enjoy this delicious, yet simple recipe as much as I do!
Ingredients:
- Box of lemon cake mix
- 1 8oz container of cool whip
- 2 Eggs
- Powdered Sugar
Directions:
Preheat the oven to 350° degrees and while the oven is heating up, prepare your cookie sheet by lightly greasing it or using parchment paper. I use parchment paper, but you can use whatever you have on hand.
Next, combine the cool whip, cake mix and eggs and stir. The batter will be sticky, so don’t worry if it looks a little odd. This batter won’t have the same consistency as normal cookie batter.
Poor some powdered sugar into a an empty bowl. Take one spoonful of the cookie dough and roll it around in the bowl of powered sugar. You will notice that the cookie dough is easier to handle with the powered sugar. Go ahead and place the powdered cookie dough onto your cookie sheet and repeat until you have about 16 on your cookie sheet.
Bake for about 9-11 minutes until the edges are a bit brown but not burned (of course).
